Marinate steak with salt, black pepper, olive oil and lemon juice. Heat the griddle to high and put the steak in dry pan to sear it. Your steak should sizzle. Do not move it so that a crust is formed. After about 2 to 3 mins that side of steak should be golden to dark brown. Turn the steak and sear the other side also and then turn the heat to medium low. let it cook for a few mins. 8 to 10 mins. To check whether its done, poke it with a toothpick in the middle. If the water comes out clear its done. Take it out of pan and put it in dish and cover it lightly with a foil and let it rest for about 5 mins.

Serve with brown sauce made with the drippings of steak. Steam the vegetables half cooked. Chop onions and fry them in butter till golden brown… add chopped garlic fry a little more. Add the green vegetables and stir fry on high for about 3 mins. Add salt and pepper. For potatoes… steam the potatoes and fry them in little butter. Add salt.

in a cooking pan add 2 spoons of butter and onions, when it’s golden add the meat and slowly cook it, when it’s semi cooked, add 4 spoons of melted butter + 3 spoons of flour, mix all well, as you heat it slowly try to add the fresh cream slowly as you stir add some black pepper and mushrooms and taste before seasoning it with salt (often add ground black pepper generously)

My Plate – roast beef with red plum chutney, roast potatoes and veggies on gravy and yorkshire pudding… 🙂

Okay.. I had a recipe that called for the meat to be marinated with garlic and mustard, salt and pepper, and baked in the oven for well-done for 40 mins. I did that – I had a 700gm piece of top-side roast beef. After 50 minutes, the thermometer only showed “rare” – which was almost a disaster since I had to serves dinner in half an hour.

Thank God, I have a pressure cooker 🙂 So I browned rings of 2 onions, added salt, pepper, bay leaf, one carrot 1 and half glass of water and the meat.. as it was from the oven. Set the timer to 25 minutes and prayed 🙂

25 mins later, the meat was tender, showed well-done and smelled heavenly 🙂

The sauce remaining in the cooker I thickend with some cornflour.. and adjusted spices. Sieved it through a sieve and got a nice thick gravy.

Veggies were done in the pan with olive oil some garlic and salt.

I took the beef out of the cooker, heated some olive oil in a pan and fryed it from all sides to get the “boiled” look off and make it look nice and brown oven roasted 🙂

Yorkshire Puddings – again, I did not follow recipe – since it was in the same one as the beef.. :/ – rather I mixed about
1 cup of flour
1 egg
salt, pepper
1/4 tsp baking powder
with enough milk to get a relatively thin batter.

Sprayed the forms with olive oil generously and let them heat up in the oven for a few minutes. They must be hot enough for the batter to splutter when it goes in. The puddings took around 15 minutes.

Be careful to bake them when u are almost ready to serve, since they fall in when left to stand too long. And DO remove them from the form immediately, otherwise the bottom will get soggy.. which is not what u want.

The plum chutney is the normal alu-bukhara chutney..

rad chili 1 tabel spoon
lemon juice 4 tabel spoon
imli water 2 tbel spoon
besan 1 tabel spoon
first of all i merinate the fish with salt for 1 hour then wash it properly then dry it then take
chopped garlic ajwain red chili salt lemon juice one egg besson lemon juice marinate fish with this mixture
at least for 5 to 6 hour fry it on low heat.

1) Take any Fish Fillet cut in pieces, add Garlic-Ginger paste, Salt, Soya Sauce and marinate it for 30 minutes.

2)  For Fish Coating, in a bowl take Flour-Baking powder, Salt, 1 Egg, Chili Powder and mix them, add little water and make a smooth coating

3) Pour the Fish in 2 this coating and fry them

4) Cube the Onion and half the Green Chili , Tomato Sauce and i use ready made Hot/Spicy Tomato and Szechuan sauce Curry

5) Heat the pan,  pour oil then add Onion, Green chili after 5 minutes, put all the Sauce, pinch of salt and half cup of Hot Water, after 10 minutes put the fry fish in it

Mix and serve!

2 lb. fish fillets, such as salmon, cod or halibut or fish steaks, such as shark, tuna or swordfish, cut 3/4″ thick
1/2 c. honey
1/4 c. soy sauce
Juice of 1 lemon
1 tbsp. Oriental sesame oil
1/4-1/2 tsp. crushed red pepper flakes
1/2 tsp. crushed black pepper

Place fish in glass or ceramic baking dish. Combine honey and remaining ingredients and pour over fish to coat. Cover with plastic wrap and marinate 30 minutes before cooking.
Light barbecue grill. When coals are ready, oil grill with oil or cooking spray and put in place. Place fish on grill, skin side down if you’re using a fillet. Cover and cook 5 minutes. Drizzle fish with marinade and cook 3 minutes more or until fish turns opaque. If you’re using steaks, turn fish after 5 minutes; drizzle with marinade and cook 5-7 minutes longer or until fish turns opaque. Makes 6 servings.

2 potatoes ( cubed)
4 tsp mustard
1 sp sliced pickled carrot
2 tsp garlic
8 tsp olive oil
3 lemon juice +zest
salt and pepper
1 kilo fish filler

mix all of ingredients (except for parsley ) add it to the fish fillet to marinade( u can leave it overnight )
bake for 20 minutes or till its cooked
sprinkle parsley and serve with white rice and lemon wedges …..enjoy :))

just in a good mood for fish n chips ? well i am always in the mood for that as if i was born in rainy leeds lol yet i like to enjoy a good display guys comeon , i hate to eat in carton boxes lol ok get started 🙂

1 lb. fresh or frozen fish filets (haddock, cod, or halibut)
1 egg, slightly beaten
1 c. crumbs, cracker, dried breads, or corn flake
Crisco shortening for frying
6 slices American cheese
6 sandwich buns
6 tbsp. tartar sauce, or favorite brand may be used

Cut fresh or partially thawed fish into six 3 inch squares about 1/2 inch thick. Dip fish portions in egg then in crumbs. Fry fish in 1/2 inch Crisco heated in 350 degree oven in electric skillet (or large skillet over medium heat) until golden brown, about 4 to 6 minutes on each side. Or fill deep fryer half full with Crisco and heat to 365 degrees. Add fish and fry until golden brown, about 4 to 6 minutes. Drain on paper toweling. Place one side of cheese on bottom half of sandwich bun. Top with hot fried fish. Spread 1 tablespoon tartar sauce over fish. Cover with top half of bun.
Prebreaded frozen fish fillets may also be fried as shown above. Tartar sauce: In a bowl, combine 1 cup mayonnaise or salad dressing, 1 tablespoon finely chopped dill pickle, 1 tablespoon finely chopped onion and 1 teaspoon lemon juice.

1/3 cup cream fresh
2 beaten egg yolks
2 spoons of lime or lemon juice and zest
,paprika ,salt n pepper
finely chopped parsley
sep 1 : melt butter
step 2 : mix the lemon juice or lime juice to the egg yolks and beat well till its well mixed and add salt ,
add step 2 to the melted butter on a low heat ,till its well cooked ( it will form a thick paste ) add salt pepper and paprika and parsley then add the cream fresh ,dont heat anymore .
set aside
deepfry the fish fillet as usual and then add the sauce to the fish fillet , serve with rice and salad and lemon slices .
** i served golden yellow rice with peas

1 c. mayonnaise
2 tbsp. dill pickles, chopped
2 tbsp. stuffed olives, chopped
1 tbsp. onion, grated
1 tbsp. parsley
1 tbsp. capers
1 tbsp. lime juice or lemon juice
1/4 tsp. garlic salt

Mix above ingredients together. This is one of the best tartar sauces I have ever tasted. Wonderful with fish, shrimp or crab.

Karrari Fried Fish …

4-6 Fish fillet
5-6 tblsp milk
1tsp salt
¾ tsp red chilli
½ haldi
½ tsp meethi powder (fenugreek powder)
½ tsp ajwain (celery seeds)
2tbsl corn flour
½ tsp aamchoor ( dry mango powder)
½ cup besan(gram flour)
¼ cup plain flour
1tsp white cumin seeds
5 tblsp fresh lemon juice
½ tsp garam masala (all spices)
1 egg

Wash and make pieces of fish.
Soak them in the milk for 15 minutes.
This takes away that smell of the fish!!
Drain out the milk before marinating the fish
Mix all spices along with the egg into a smooth batter.
Rub al over the fish pieces.
It shouldn’t be too thick nor too runny.
Leave it in the fridge for an hour or two.
Deep fry and sprinkle chaat masala on it as soon as u take it out.
Serve with chapatti and Garlic+green chilli raita!!

900 gm potatos (boiled-masloo2a)
1/2 c milk
50 gm butter
4 garlic cloves(finely chopped)
4 pieces of fish fillet (200 gm each piece)

prepare the potatos by mixing them with the butter & milk till soft like mashed potatos & add salt & pepper.

prepare fish by adding salt, papper & garlic & frying it for 1 minute on each side(to make it 1/2 done).

put fish in a pan & add a potato crust over each piece & enter preheated oven for 15 min. , then open the grill for few minutes till golden brown.
