Nawshin Laila’s haleem

mutton – half kg
onion- 4 med
garlic n ginger paste – 1 spoon
green chillies – as much as u like
green coriander
cucumber
haleem mix masala .. – 1 pack

heat some oil in the pan and then fry some onion and then some garlic and ginger paste and put the meat. when the mixing is done pour some water for the meat to get cooked. once the meat is tender, i followed the haleem mix receipe … just follow that.
once cooked, spinkle with fried onions, green chillies, coriander and cucumber and lime.

Cook the meat partly, preferably bone in beef in small diced pieces and cook it like Voona.

I have used Broth Mix* which is a mixture of several peas, lentils, wheat, etc. Haleem need all kinds of peas, lentils, cereals. So use as many you can get. Use little amount of fine rice as well. If all these mixture is about 200 g, rice shouldn’t be more than 30g. Soak all these in water over night.

Use all kind of spices you know. Soak spices in water & make like a paste 30/40 min earlier cooking.

Heat oil in large pan, fry finely chopped onion. Bring it to light brown. Add Garam Masala and bit later all other spices. I always use some boiled water this time to make all the spices done properly. Keep stirring. Oil will start floating over.

Add all the cereals and pulses. Fry for minutes. Add meat. Mix well. Add water after 2/3 minutes. I use bit more water while cooking Haleem; so that don’t need to add any water later to keep the taste nice. Put the lead on and heat high. Don’t forget salt.

It takes apparently lengthy time to cook. Now it needs your attention and frequent stirring. When boiled put in simmer in lower heat. Open lead and let water evaporate to form thickened gravy; as you like.

Serve with coriander, ginger, green chilli, fried/spring onion, black salt, lemon & whatever you like.
