উপকরণ: গরুর মাংস ২ কেজি, পেঁয়াজকুচি দেড় কাপ, পেঁয়াজবাটা ১ টেবিল-চামচ, আদাবাটা দেড় টেবিল-চামচ, রসুনবাটা ১ টেবিল-চামচ, বড় এলাচ ৩-৪টি, তেজপাতা ৪-৫টি, জিরাগুঁড়া ১ টেবিল-চামচ, ধনেগুঁড়া ১ চা-চামচ, লাল মরিচবাটা ১ টেবিল-চামচ, তেল ১ কাপ, জায়ফল, জয়ত্রিবাটা আধা চা-চামচ, কাবাব চিনিবাটা আধা চা-চামচ, এলাচ, দারচিনি ও লবঙ্গবাটা ১ চা-চামচ, লবণ স্বাদমতো, গোলমরিচবাটা আধা চা-চামচ, সরিষার তেল ১ টেবিল-চামচ।

প্রণালি: গরম মসলা ও গোলমরিচ ছাড়া বাকি সব মসলা ভালোভাবে মাংসে মাখিয়ে তেল দিয়ে চুলায় দিন। মাংস সেদ্ধ হয়ে পানি শুকিয়ে গেলে একটি লোহার পাত্রে সরিষার তেলে ১ চা-চামচ পেঁয়াজ ভেজে এতে মাংস ও বাকি মসলা দিয়ে অল্প আঁচে রাখুন। কিছুক্ষণ পর পর নেড়ে দিন। কালো রং হয়ে এলে মাংস নামিয়ে নিন।

beef strips: 1 kilo
black pepper powder: 1 tsp
salt: 1 tsp
green onion/spring onion: half a bunch
fresh chili: 4 (halved lengthwise)
soya sauce: 2 tbsp
oyster sauce: 1 tbsp

marinate the beef strips with salt and black pepper for an hour.
stir fry the beef strips in oil in medium heat for few minutes. u can add some water to help cook the meat. once the beef is tender, add soy sauce and oyster sauce. stir in high heat.
cut the green leaves of the spring onion 1 inch long. chop the white part (the end part of the stalk) finally. keep the chopped part aside for garnishing. add the cut green onions to the beef while stirring well. add the fresh chillies. remove from the heat once the spring onions start to wilt down.
garnish with chopped green onions and basil.

garlic paste : 1 tea spoon
turmeric powder : 1/2 tea spoon
coriander powder : 1 table spoon
elach : 5-6
darchini : 2-3 pieces
salt : according to taste
oil/ghee : 1/2 cup
green chili : 4-5
rose water : 2 table spoon
sugar : 1 table spoon

mach er tukro bhalo kore dhuye nite hobe. green chili baad e shob moshla r youghurt mach e makhiye rakhte hobe. sugar r salt o ek shathe add korte hobe. hari te oil/ghee add kore tate gorom moshla add korte hobe. erpor mach add kore olpo aach e ranna korte hobe. mach ulte diye lid diye dite hobe. kheyal rakhte hobe mach jeno bhenge na jai. jal ekdom komiye dite hobe.pani shukiye tel upor uthe ashle rose water r green chili ek shathe add kore aro half an hour khub olpo anch e rekhe dite hobe. tarpor namiye upore kismis r pesta badam diye decorate kora jai.

Stuffing:

I just used some of the left over Chicken Chaapli Kabab Mix for the stuffing. I just added a little corn flour to it to make it a little sticky so that it doesn’t get messy. Just pan fry the Keema mix and set aside.

You cab use any kind if pepper for this. I used the yellow peppers..I am not sure what they are called but sure you will see them in the stores.

The key to have this dish prepared is to get the skin off the peppers. You can Grill them or put them in Boiling water for couple of minutes. The skin comes right off.

Make a cut on the top and take out all the seeds and membranes. Lightly salt the peppers in and out. Put the stuffing in.

Make a gravy to your taste and koshafy the stuffed babies.

My gravy:

-Lightly brown a Whole chopped Onion in oil. Add Ginger garlic paste, Turmeric, Red chili, Coriander powder, A little tomato paste and sugar. Koshafy it well and add the peppers.

Garnish with coriander leaf.

Marinate steak with salt, black pepper, olive oil and lemon juice. Heat the griddle to high and put the steak in dry pan to sear it. Your steak should sizzle. Do not move it so that a crust is formed. After about 2 to 3 mins that side of steak should be golden to dark brown. Turn the steak and sear the other side also and then turn the heat to medium low. let it cook for a few mins. 8 to 10 mins. To check whether its done, poke it with a toothpick in the middle. If the water comes out clear its done. Take it out of pan and put it in dish and cover it lightly with a foil and let it rest for about 5 mins.

Serve with brown sauce made with the drippings of steak. Steam the vegetables half cooked. Chop onions and fry them in butter till golden brown… add chopped garlic fry a little more. Add the green vegetables and stir fry on high for about 3 mins. Add salt and pepper. For potatoes… steam the potatoes and fry them in little butter. Add salt.

Jambalaya shrimp and sausage

RECIPE:

all you need is one big pot:

-sautee onions, green/red peppers, celery in a pot
-add fresh or canned tomatoes
-add the meat (sausages, shrimp, chicken, whatever u like) and cook
-add 6 cups of rice into the same pot
-add 7 cups of chicken stock
-oh ya and salt/pepper

cover and put in the oven for 45 mins…garnish with parsley..and voila ur done!

Spring Roll:

Ready made spring roll wrapper.

Filling:
diced chicken, julien vegis like carrot, cabbage.. sprouts…

heat oil add garlic and onion add chicken.. add vegis.. add soy sauce, tomato sauce oyester sauce and fish sauce…stirr.. cool it down…

fill the wrapper roll and deep fry.

Sweet Sauce:

1 cup viniger, half cup sugar, one clove garlic, and one clice ginger. mix and boil untill thicken… discard the garlic and ginger…

grate some carrot… add it to the syrup, and some green chilli.

Noodles~
Top Ramen noodles / Maggi noodles
Boil the whole noodles in water
Then deep fry it
Fry the noodles just before serving…can use noodles from chinese store too..they have chopsuye noodles.

Gravy~
Add oil in a pan.
add garlic paste when oil is hot..satay it.
Add shrimp / sliced boneless chicken in it,cook it.
Then add sliced cabbage,onion,carrot,bell pepper any other veg if you wish along with vineger,ltl tasting salt,tomato ketchup,ornage / red food colour & salt.
cook the whole thing.
Add sugar to taste.
Make corn starch paste and pour the starch in it..when it’s thick done.

Serve it as shown in picture or you can add the gravy on top of the fried noodles.

Garnish it with poched/fried egg.
